Healthy chicken nuggets? Yes, Please! Here is an alternative to a deep fried chicken nuggets and French fry meal. I promise you will like it too!
Pre-heat your oven to 450 degrees
Take your parsnips and peel them, then slice them into thin matchstick sections. About 1.5 pounds of parsnips is good for 4 people.
The other alternative which I highly suggest is buying them already sliced and ready to go in the frozen veggie aisle at the grocery store. This cost about $1.50 but saves a lot of time!
Lay them in a single layer on a baking sheet
Drizzle 2 tablespoons of olive oil over them
Lightly Salt
Bake about 30 minutes or until they start to brown.
While your fries are in the oven make your nuggets!
Take your thawed boneless skinless chicken breast and cut it into cubes or slices, whichever you prefer.
Take a bowl and place one egg and 1 tablespoon of water in it and whisk it together.
Take another bowl and place 1.5 cups panko, 1 teaspoon garlic powder, 1/2 teaspoon pepper and any other spices you think might be good and mix it together.
Take a few cubes of chicken at a time and dump them into the egg mixture and then into the Panko mixture. Make sure the nuggets get the Panko mixture all over them!
Spray your baking sheet with cooking spray and lay your nuggets in a single layer. I put tinfoil on my pan, for even easier clean-up! I would still suggest spaying it with cooking-spay like olive oil so the nuggets don’t stick to the tinfoil and loose its crunchy outside goodness.
Bake in the same oven as your fries for 10 minutes, then flip them, and bake for another 10 minutes or until they are starting to brown.
I did forget to take a finished picture of the nuggets, but let me tell you, they looked as delicious as they tasted!
